Taste the Difference - USMEF's Pure Pork Hits Mexican Foodservice Sector

In Mexico, where the demand for U.S. pork exports is substantial, the U.S. Meat Export Federation (USMEF) has launched an essential marketing initiative known as the Pure Pork program. This program sets stringent standards to differentiate U.S. pork as top quality, ensuring it is not subjected to any water or other enhancements during processing. Gerardo Rodriguez, USMEF Regional Director, shared insights into the program and its significance with pork industry leaders.

Mr. Rodriguez highlighted that there are currently no government regulations in Mexico to identify and label pork products that have been injected with water or other substances. As a result, some products flood the market with varying water content, compromising the taste and overall quality of the meat. To prevent this issue, USMEF has collaborated with pork companies and distributors committed to selling unadulterated, natural pork.

The Pure Pork program emphasizes offering pork in its natural state—no injection, no marination, and no added water—preserving the genuine flavor and texture. The main aim is to stop people from getting used to meat with too much water because it might make them unhappy with changed pork that tastes worse.

The program has seen significant success in Mexico's retail sector, especially with the support of nationwide partner Costco. Building upon this achievement, USMEF is now expanding the Pure Pork program into the foodservice sector. A pilot program in Monterrey served as a foundation, and it has progressively extended to Mexico City and Guadalajara, with plans to reach Chihuahua.

Mr. Rodriguez emphasized that this expansion is not merely a marketing activity but rather a crucial step to sow the seeds of change in the entire Mexican pork industry. By promoting the consumption of unadulterated pork, the program sets new standards and expectations for the future, aiming to maintain the authentic taste and quality of pork products.
